Chicken & Melon Salad

Salads

  • 1/4 watermelon
  • 1 cucumber, peeled and sliced
  • 2 boneless, skinless chicken breasts
  • 1 cup Havarti or goat cheese cubes
  • Lettuce

Cook chicken breasts (season with salt and pepper) and cut into bite-size pieces. Slice cantaloupe into 4 sections. Using a melon baller, scoop out balls of the fruit and set aside. Reserve rind for serving dishes. Scoop out watermelon balls. Arrange lettuce, fruit, chicken, cucumber and cheese in the rinds and serve. Serves 4.

Cantaloupe & Arugula Salad

  • 3 cups arugula

Slice cantaloupe into small chunks. Place in salad bowl and toss with arugula. Serve plain, or drizzle with a dressing. For added flavor, toss in blueberries, sliced strawberries and chopped prosciutto. Serves 6-8.
