- 1 cantaloupe
- 1/4 watermelon
- 1 cucumber, peeled and sliced
- 2 boneless, skinless chicken breasts
- 1 cup Havarti or goat cheese cubes
Cook chicken breasts (season with salt and pepper) and cut into bite-size pieces. Slice cantaloupe into 4 sections. Using a melon baller, scoop out balls of the fruit and set aside. Reserve rind for serving dishes. Scoop out watermelon balls. Arrange lettuce, fruit, chicken, cucumber and cheese in the rinds and serve. Serves 4.
