Watermelon & Arugula Salad

  • Watermelon Arugula Salad-July 20121 tablespoon fresh lemon juice
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon table salt, or to taste
  • 2 tablespoons extra virgin olive oil
  • 3 cups cubed seedless watermelon
  • 6 cups arugula
  • 1/3 cup shaved Parmesan cheese
  • Black pepper, to taste
  • Sea salt, to taste (optional)

Whisk together lemon juice, vinegar, and table salt in a large bowl, then add oil in a slow stream, whisking until emulsified. Add watermelon and arugula and toss to coat; sprinkle with cheese, pepper and sea salt. Serves 4-6.
