Chilled Corn Salad

  • 1 red onion, diced
  • 1 pint grape tomatoes
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped cilantro
  • Parsley for garnish

Husk corn. In a large pot, place 2 tablespoons salt and fill with enough water to cover the corn. Bring to a boil; add corn and cook 4 minutes. Remove corn and place in a large bowl of ice water. When cool, cut off the kernels and place them in a large bowl. Add remaining ingredients; toss and garnish with parsley. Serves 6-8.
